You can ask at the counter of the sandwich places, but I would suspect that the chicken and turkey meats that they use are at least injected with a salt-solution, if not some other flavorings and such. Just call me distrustful!

Of course asking them would answer your question more accurately. One possible problem from such processed meats, assuming that they are processed, are that you would be getting too much sodium from salt and monosodium glutamate (MSG). But they are still probably a much better choice of sandwich filling than salami and liverwurst and the like, which have even more things added, as well as more fat and less protein per ounce or gram.
