My doctor has asked me to go on a high-gluten diet prior to being tested for celiac disease. I was wondering is eating whole-meal bread considered high gluten? I am on a weight-loss program and want to complete my 'high-gluten challenge' by eating healthy breads that are high in gluten. Can anyone help me identify such breads?
Gluten is mostly found in wheat but also found in rye and barley. Lots of products are made from wheat so it's easy to find. I'm not familiar with "whole meal" bread; is it 100% whole wheat? Or 100% whole grain? What are the ingredients?
For your purposes, I think the healthiest would be 100% whole wheat. That would likely contain the most gluten.
