If you want more definition, you have twi choices, build the muscle or drop the fat. It sounds like you are getting plenty of cardio, which is why I suggested weight training.
Sidenote: I personally like when women have some muscle on them. I'm not talking about female powerlifters or bodybuilders, but It thinks its definitely cool when women have some muscle on them. I think most women are afraid to lift heavy fearing they will turn into a shemale, when in fact its a lot harder for women to gain the mass that men can gain.
