As long as it's working, I don't see any reason to change it. However, if you want advice on tweaks, instead of potatoes or rice, I'd go for something with a lower GI, like fiberous veggies or Tabbouleh (I am addicted to this stuff - not as funky as it sounds), maybe whole wheat toast, beans or at least brown/wild rice.
Also make sure you're getting in enough EFAs. The peanut butter is the only good fat you're getting right now. Drop in some nuts or avocados or olives or salmon or flax/Udo's oil. It will definitely help.
Since you're not trying to increase lifts, you can drop the creatine if you want. It will also help you to lose some of the bloat and make you look leaner.
