Depends on what you are doing. It's bendy like that so you can get a more natural grip for some lifts. I prefer a straight bar for benching, but I can't do upright rows with anyhting but an EZ Bar. But I can't say that it really makes any difference for strength or definition based on which way you grip the bar (reverse grips excluded).
