Muscles being sore the next day have more to do with lactic acid buildup in the muscles. Increased consumption of protein is not going to do too much for you there. If I remember correctly slow twitch muscle fibers help get rid of the lactic acid and help a person from getting too sore the next day. I'm sure if you did some reasearch on lactic acid and weight training you'd probably find some additional information on it.
