If you have the time to wait, I would say one foot at a time. If you have a lot of support at home, as well as a plan to make your home handicapped friendly, both at the same time may work for you. I had double bunion surgery on the right foot (first and fifth metatarsal). I was able to get around with a walker, but did need to spend time completely NWB due to a one week setback. It was terribly difficult to get around, and I was grateful it was only of short duration. There are people who have written on this board who had double bunion surgery and were happy they did. Look in the archieves if you don't get responses to this post. My surgery was five months ago, and I'm doing well. I will need the same surgery on the other foot eventually, but for now I'm enjoying my improved mobility.
