Diced Food

When you dice/mince vegetables and fruits, at home, with a food processor, do the vitamins get lost or diminish, as opposed to just eating them as is (non diced?)

Re: Diced Food

I don't think anything would change if you ate them fairly soon after processing. If you left the food out, some of the nutrients could be lost, even if the food didn't actually spoil.

Re: Diced Food

No, you don't lose any nutrients when you cut up vegetables or fruits. That would be a little extreme - how could we eat most of the produce without cutting it first?
Even if you aren't going to cut the apple you'll be eating, you have to chew it before you swallow.
You'll lose nutrients from the particles you don't consume of course...so whatever's left in the container or thrown out, and also if you choose to heat the vegetables.
