It's really freaky, isn't it? When I was a wee one, my mother rushed me to the doctor because I ate half a jar of homemade pickled beets and had red stools and pink urine for two days. The doctor immediately asked if I'd eaten beets lately. Sure enough! Everyone's guts move at different speeds but I would say by three or four days you should have normal colored stools.

I think I have the same problem but I just wanted to confirm. I went to the bathroom today and had a purple stool. I was freaking out. I had beets on saturday with dinner but i think it was only one, i'm not sure because i ate it at a restaurant and they cut it up into pieces. But I ate it on sat and today's monday. Shouldn't have happened right away? I'm just a bit concerned

no, it can take a couple days for the food to make it from one end to the other.
