If they have to numb you, just make sure you request that they use an epinephrine-free anesthetic. The epinephrine (adrenaline) in common dental anesthetics can cause racing heart/palpitations.
Otherwise, just warn your dentist that you get palpitations and agree on a hand signal that you'll use if you need him/her to stop for a minute until you feel better. It helps to feel like you are more in control of the situation.
