It takes GENERALLY 3-4 months (some earlier, some later) after intial infection for the blood to produce enough antibodies to be detected in a blood test. So if you have symptoms and go to your doctor with an obvious sore/lesion, they can swab/culture/type that sore for herpes. AT THE SAME VISIT, they should do an IgG (NOT IgM) blood test to detect the antibodies in your blood.
If the swab comes up positive for herpes but the blood test comes up negative or low positive that GENEALLY means this is a new infection for you. Which GENERALLY means you were infected recently - between that 3-4 months window.
That is about the best timeline you can come up with in figuring out 'when'. But again each person is different and that timeline can vary.
