I suppose it possibly could be the cinnamon gum, as I recall some reports of mouth irritation with long term use of cinnamon oil in gum.
I don't believe there is any health benefits to chewing cinnamon gum either, so I see no point to it. Saliva deactivates some of the good things cinnamon does related to cholesterol (if in fact it does anything). If there is extra sugar or aspartame in the gum, it can't be good for you either.
Eating cinnamon on rolls, etc. I imagine would be fine, however.
By the way, if taking magnesium, avoid magnesium oxide. Hardly any of it is absorbed by the body (it's basically a waste, in other words). Go for a chelated mag product (orotate, glycinate. etc.).
