Can you make food ahead of time and reheat it?
Some thing I gave my kids were:
Cheerios, and dry cereal. (often just to keep them busy while I prepared someting else, i.e. eggs)
Scrambled eggs or yogurt
Applesauce, or small, soft, cubed fruit with toast triangles are another option.
Pancakes (without the syrup of course) or frozen waffles. I think a whole grain muffin would be ok too. Or a breakfast bar. By 15 months I fed my kids anything I prepared, just made sure it was cut up, or mashed.
If you are concerned about it being balanced nutritionally, look at all the Gerber graduates stuff in your supermarket, and then try to mimic it.
