When I was first diagnosed with Celiac Disease I learned that you need to read the ingredients in everything very closely.
Sometimes starch means potato starch, or corn starch, or wheat starch, etc. Modified Food Starch could mean corn starch or potato starch, but it could also mean wheat starch. Avoid stuff with malt flavoring. The labels are a little better today than a few years ago but you still need to read over every ingredient until you know what's safe and what's not, depending on whatever it is you're allergic to.
Potatos, Rice, Tapioca, Chicken, and possibly Corn should be okay to start off with. You'd probably want to avoid wheat, rye, barley, oats and dairy. Basically everything that is processed. Try to stick with stuff you make at home from scratch.
You'd probably be able to find better examples online, like I said I am only familiar with the ones for Celiac Disease. Good luck!!
