Hi k2626, I post a lot of how high iron can inflame the liver and pancreas on this forum and I don't wish to sound like a broken record, but have you had a full iron study done?
I see from your post you are female... If your still menstruating high iron shouldn't be a problem for you unless you are taking iron supplements or "women's vitamins" with iron. If you are, I would consider stopping the iron unless you have a recent positive diagnosis of iron deficiency anemia.
Polyunsaturated fats can also cause problems with lipid peroxidation in the pancreas... If you're taking fish oil or flax etc polyunsaturated supplements, this can also cause problems. If you do consume large amounts of polyunsaturated fats/oils you need a lot of vitamin-E to keep these from oxidizing.
Vitamin-E and Lecithin are the two supplements most often mentioned as helpful with lipid peroxidation and problems with the pancreas. Have you looked into these?
