When I was younger I would hold it down, since my penis was small and if I didn't, the urine would hit the rim of the bowl. I continued to do that into adulthood out of habit, until one day I realized I was finally big enough that I didn't need to do that anymore.
As for the movies, well, they aren't really urinating in front of the camera, so even if the actor did do that in normal life, he wouldn't do it in front of everyone.
