Carotenosis: Too many vegetables

I have wondered for a long time now why my hands and soles of my feet were so orange in color. I found out today that getting too much vitamin A/ carotenoids can cause this orange color in these very locations. I eat a lot of vegetables/fruits, and can pretty much guarantee that this is my problem.

But, I can't figure out how to construct a diet that avoids vitamin A and carotenoids that remains healthy. Pretty much all normal vegetables need to be avoided. Many fruits too. And oatmeal, milk, etc. I changed my diet to a lot of whole wheat bread, beans, and nuts today and am not feeling near as well as I usually do. How the heck can I eat healthy and avoid vitamin A and carotenoids?

Btw, I am going to the dermatologist in a week to verify my having carotenosis. I plan to request a blood test, but I'm pretty confident this is my problem.
