Delicious Calcium Rich Recipe

Broccoli and Ramen Noodle Salad

INGREDIENTS:
1 (16 ounce) package coleslaw mix or grate fresh carrots and cabbage
1 bunch of broccoli florets (fresh if in season)
2 (3 ounce) packages chicken flavored ramen noodles
1 cup unsalted peanuts
1 cup sunflower seeds
1/2 cup white sugar
1/4 cup vegetable oil
1/3 cup cider vinegar

DIRECTIONS:
1.In a large salad bowl, combine the slaw, broccolie florets, and broken noodles.
2.Whisk together the sugar, oil, vinegar and ramen seasoning packets. Pour over salad and toss to evenly coat. Put the peanuts and sunflowers on top and eat!

This makes 6 servings and has around 90mg of calcium per serving. Yumi, nutritious, and easy!

Thanks for the recipe that would be a great one to take to an outdoor gatherning..no mayo to worry about spoiling. I wonder how adding a can of beans would taste.

I didn't know we could share recipes on this board...this isn't a recipe but a way to get a bit of extra calcium with your morning coffee. I put a spoonful of blackstrap molasses along with milk in mine. Don't cringe, its good. The milk balances the acidity of the coffee while the molasses give it a nice gingerbread taste along with calcium, iron and several other nutrients. For breakfast i've also started using a cup of yogurt on my cereal instead of milk. have agood day...phyllis

I don't know but i would give it a try! I wish I could kick the sugar habit...but it will never happen...

I started eating hummus a while back and am now hooked on it.. It's easy to make and is a good source of calcium and healthy fats.

Hummus

1 can garbanzo beans....drain liquid into a cup
1/4 c. tahini...sesame seed paste...i get it at a health food store
2 cloves garlic..peeled..more if you want it real garliclly
2T. lemon juice
1/2-1 t. cumin
1-2 T. olive oil
pepper to taste

Put everything into a food processor and mix adding bean liquid as needed to make a smooth diplike consistency.

I make my own chips...cut pita bread or flour tortillias into pieces and bake for 10 min. at 350. They are lower in fat than regular chips and keep well in a zip lock bag. Enjoy...phyllis
