Hello everyone, My daughter sent me this recipe for Pumpkin latte an let me tell you its good. It's a nice treat and good source of calcium. I made a quart instead of 2 cups using skim milk, real sugar, and instant decaf coffee that i mixed in the pot. I like cinnamon so i added some of that too. I had a cup hot and put the rest in the fridge for later. I think it would be just as good cold. take care..phyllis
Just Like Starbucks Pumpkin Spice Latte
Makes 1-2 servings
Ingredients:
2 cups milk
2 tablespoons canned pumpkin
2 tablespoons sugar or sugar substitute – adjust to taste
2 teaspoons vanilla extract
1/2 teaspoon pumpkin pie spice
1/2 cup strong brewed coffee (or 1/4 cup of espresso if you have an espresso machine)
Directions:
In a saucepan stir together milk, pumpkin and sugar. Cook and stir over medium heat until steaming. Remove from heat, stir in vanilla and pumpkin pie spice, transfer to a blender and process for 15 seconds or until foamy. I don’t usually bother with the blender and just whip the mixture really well with a wire whisk.
Pour into a large mug or two mugs if you decide to share. Add the coffee or espresso on top.
To dress it up top with whipped cream and sprinkling of spice.

Hi Phyllis... I tried the recipe and thought it was great. It's just starting to get cold here and it hit the spot. Believe it or not this was my first official Latte!! Unless you count the coffee milk my mom gave me when I was a pre-teen, as a sub for the real thing.
Hi DB, glad to hear you like the latte. To make a vanilla latte start with milk, add instant coffee, a splash of vanilla or almond extract and a sprinkle of cinnamon. This too is good iced or hot. take care...phyllis

HI Jan..how are things in OK? Still getting out to play golf? Thanks for posting, i was beginning to wonder if there was something wrong on the board. It's been very slow lately. I'm now on my 4th batch of the latte. I make it by the quart and almost like it better cold than hot. OH, i also added a bit more pumpkin than called for a smoother texture. take care...phyllis
Hi Phil...I've been dying to try it. It sounds great. Just waiting til I buy some pumpkin for pie around thanksgiving. I don't have a blender, so I will have to whisk it. I love coffee, so I am sure this will be a real treat.
