He doesn't drink everyday but is he an alcoholic?

I've been with my boyfriend for 12 years and I think, in my definition he's an alcoholic who won't of course admit it. He doesn't drink everyday, this I know for a fact, however, he drinks say every third or fourth day, sometimes with a gap of a week, but then when he drinks he'll drink a glass of wine, one after an another, or beer or worse whisky. He'll be drinking all night and roll in the early hours stinking, sweaty, eyes rolling, talking too loud, falls into bed or the sofa, sleeps it out the next day. When I say to him frankly I think he's an alcoholic he says of course not

I am an alcoholic in recovery 8 years and I often would have periods of years where I didn't drink every day. Sometimes only once per month. Once I quit for 4 years. I did this dry periods to convince myself that I wasn't an alcoholic. I took the same trip to the bottom as any other alcoholic/addict- it was just a longer ride. Whether he is an alcoholic or not is really up to him. Whether you are bothered by the behaviors are not is up to you. You'll probably hear this from alot of people but al-anon can be a great resource in a situation like yours, especially if you are concerned about his drinking.
