Why are you so hesitant to date her on a Saturday evening? I'm not sure what this woman does for a living, but it's very hard to focus on a date in the middle of the week when your thoughts are on what needs to be done at the office. I would MUCH rather go out on a weekend where I can stay out late, relax a bit, and not think so much about what I need to do the following day.
At this point, I would suggest doing the weekday date. If it goes well, I would say something like "hey, I was able to free up my Saturday evening....what do you say we hit that club you were talking about?" That way you are making a concerted effort to listen to her schedule/plans, which women like!
I can tell you personally....if a guy scheduled a date on a weeknight for me because he was "unsure of whether he had plans or not," I would feel like I wasn't important enough to save his weekends for. I would MUCH rather go out on the weekend so I could focus on him and feel like a priority, but those are just my own opinions.
