Reintroducing Food after UC Flare UP

I was wondering what food (vegetables) I can try that would be nutritious and would not aggravate my ulcerative colitis. I am still taking a steriod and asacol, and have been eating carbs only. I need some extra nutrition and need to minimize carbs. My system is still sensitive but getting better. This was my first episode. It was horrible. Let is go WAY TOO LONG. Not realizing what it was. I am horrified to have it happen again and would like to know what foods helped you all the most and were the easiet to digest.

I can always eat bananas, cottage cheese, chicken soup no matter how sick I am. The first day or two it is usually just chicken broth and bananas. Then I can progress to heavier food. I make a pureed soup of chicken, sweet potatoes, winter squash and carrots that is easy on my digestion. The trick for me is to make sure the fiber is broken down and easy to pass thru. If I am really sick, I even freeze the bananas before I eat them, as the freezing breaks all the fiber down. Jars of baby food are also easy to digest and I often use them when making my soup. The tannins in tea are supposed to calm the inflamation and I think it does help me.
