Question coconut oil

I was told that coconut oil is supposed to be great for your health! Does anyone have any first hand experience with it? Thanks

Re: coconut oil

Just be careful what you read - I just payed out £40 for two tubs of virgin coconut oil. I didn't find it delicious as they say but rather disgusting and I have been trying different recipes to try and mask the flavour to no avail. And I usually love coconut! Tubs still sitting in cupboard!

Coconut oil is VERY good for health...they actually give it to aids patients cause it's supposed to have an anti-viral activity to it. It's great too cook with since the molecular structure is double bonded thus not turning into a trans fat at high heats like olive oil does. Dr. Mercola advocates coconut oil, and there is also great advice about it all ovet the internet. I bought a kind called spectrum at Whole Foods for like $6.00.

Re: coconut oil

I bought some, and I actually think it tastes really good. You can use it in pie crusts instead of butter, and it makes them taste slightly like coconut! Yum! Coconut oil is supposed to be a really good saturated fat (it is saturated), macadamia nut oil is now all the rage for unsaturated fat, is supposed to be better than olive oil, but I haven't tried it.

Does anyone know how long it takes coconut oil to go bad? Since it's saturated, I guess it goes rancid? Will it be obvious to me when I smell it? This post just reminded me I have some in the pantry.
