Confused about Stress and how it effects health...need more info

Hello everyone,
I am a PCOS sufferer and I thought I'd jump over here to the stress board to see if I can get some more pieces to my puzzle. I personally have lived a high stress life and didn't realize all the devistating effects it can have on our lives. But for any weight sufferers out there, I just learned that Stress releases corticole steroids in the body that cause water retention, and your body holds onto all the weight that you have. i'm researched enough to know also that Insulin is the only fat producing hormone in the body and cortisol effects insulin causing the same things. It's all just a roller coaster ride from there. As your body is trying to compensate itself for the loss of nutrients your body uses in order to try and keep you calm during stressful situations. Especially the B vitamins which are supposed to be used by the body to metabolize fat. I have a question. What can I do to release stress. I heard exercise is one of them and have been doing that, but since I am having trouble losing weight it's just become more depressing and stressful to exercise, I just feel hopeless. Which increases Stress levels once again and I just can't get relief. I also heard yoga helps with stress..I guess what I want to really know is what is stress perse and how does breathing exercises help? Could it be just a matter of changing how we deal with situations? Either positively or negatively?HELP
