Olive oil is a good oil to use for cooing, because of its health benifits, but I dont think it is especialy high in EFA's
The essential fatty acids is linoleic acid, which is found in sunflower oil, corn oil etc
Linolenic acid and EPA and DHA are considered "relatively essential".... you wont die without them, but you will do a lot better with them. Linolenic acid is found in flax seed oil and canola oil, EPA and DHA are in fish oil.
I would tend to take a fish oil supplement and a flax seed oil supplement to get your EFA's, and use olive oil to cook with for its other health benifits..
Oilve oil isnt essential, in that you wont die if you dont get it, but it is a very good fat in the diet, because it lacks the bad effects of many fats
