Post Squash?

I tried some acorn squash the other night- baked with some apricot preserves and butter. YUMMMMM.

My question is: is squash okay for low-carb dieting? Or any kind of dieting, for that matter? I know the butter and preserves don't make it any healthier!

Any ideas about other ways to prepare it?

I love squash, especially cooked with butter. But lately I've just been eating it cooked with salt and pepper. Maybe that butter spray stuff would be a better idea........??

Acorn squash, like all hard/winter squash, contains a fair amount of carbohydrate. They are a perfectly healthy veggie - loaded with vitamin A and other goodies - but may kill your carb budget if you are on a strict plan.

A acorn squash is 44 carbs and 172 cals..I ate it with weight watchers butter spray (no carbs or calories or fat) and salt and pepper..it was good!!

Mmmmm....I used to LOVE acorn squash baked with butter and brown sugar....but I guess 44 carbs for the squash itself, and 100000000 carbs for all the brown sugar I'd add isn't a good thing....

Boy, but if I had some in front of me I wouldn't say no!
