Mix all ingredients. Spray skillet with non-stick spray and heat.
Spoon pancakes into pan (about 3) Cook on just under medium heat til one side bubbles.
Turn, cook for few minutes til done.
Lunch:
Bengal Shrimp Curry - Low Carbohydrate Atkins Diet Recipe:
1 lb shrimp
1 T olive oil
1 T curry powder
1/2 cup onion, chopped
1 tomato, chopped
1/4 cup water
Saute onions in a little oil, sprinkle with curry powder.
Stir in tomato and saute few minutes. Add shrimp, stir to coat evenly.
When shrimp is done (few minutes), pour in water and stir.
Serves 2 @ 8 carb, 2 fiber (6 NET carbs), 294 Calories, 9 fat, 43 protein
Dinner:
Amaretto Chicken - Low Carbohydrate Atkins Diet
Recipe:
3 boneless chicken breasts
1 tbsp soy flour (or protein powder)
salt, pepper, paprika, garlic powder
1/2 Tbsp olive oil
1/2 Tbsp butter
2 tsp dijon mustard
1/4 cup SF orange syrup
1/4 cup SF amaretto syrup
Preheat oven to 350. Combine flour and spices and coat chicken.
Heat oil and butter in skillet and saute chicken til brown, 3-4 minutes per side.
Remove and put in casserole dish.
To skillet, add mustard and SF syrups.
Boil, stirring til slightly thick, about 3 min.
Pour sauce over chicken and bake, covered for 20 min.
Serves 3 @ 2 carbs, 1 fiber, (1 NET carb) 203 cal, 5 fat, 36 protein.
Howdy, Sounds good, have you made it before? I'm a lazy cook. Or rather, I don't like the clean up afterwards!
I vow to work out several times this week!! I go to the gym and do step machine and weights for 2 hrs (when I can get off my *** and go) 3 X maybe more / week.
I made the chicken tonight and it was so good!! Im going to eat it again tonorrow..lol

Okay--I'm ready!!! I was pretty lenient on the carbs this weekend (though didn't go overboard) so I'm now ready to begin induction w/out cheating!!! Let's do it gals (and guys!)

L: tuna w/ 1 tblsp. mayo & hb egg
D: salad w/dressing and marinated chicken & cheese
Snack: sf jello w/ reddi whip
I know this doesn't seem like alot. That's my trouble with Atkins; sometimes I can't seem to get even my 1200 cals. I'll have to come up with some snacks other than cheese!!!!

O.k., I ate lots of turkey and some cheese, lettuce, tomatoes, sunflower seeds (I'm an addict), atkins shakes (2), lots of water and supplements (these help me a lot), Oh, and I walked for 1 hr. with my 7 yr old boy, Christian. We tried to race each other home. Man is he fast!
