Not eating beef or lamb is going to limit your choices.
But before getting into protein, the initial phase of Atkins allows 20 grams of carbs. It looks like you are not getting that much. Atkins recommends using them to eat as many nutritional dense veggies as possible - like green leafies, broccoli, etc.
Back to other protein sources . . . do you like fish? Canned tuna and salmon are easy. Any fish filet cooks up quickly. Then you have all the shellfish. Ham, various pork sausages (pepperoni, etc.) could provide some variety, but you have to search for brands with no added sugar and Atkins did stress organic, which I take to mean added nitrates would not be good either (with the bacon also). Turkey, in various forms, either plain, deli, turkey sausages, burgers, bacon, etc. Some full-fat dairy products can be used (watch the carb count, though).
