Here's a recipe I came up with. It's pretty health and very tasty. All amounts are to taste.
In a good sized bowl mix the following ingrediants. You'll want to make enough to have amount of sauce. I never measure it so my measurements beloow are just guesses.
garlic (diced very small.. one to two gloves)
red onion (diced very small... probably about 1/4 to a half cup)
Non-Fat Plain Yogart (1 to 2 cups... more if you don't want it to spicy)
Dijon Mustard (hmm... I'm not sure how much I use. Proably between 1/2 to 1 and 1/2 cups. Just do it to taste. It should be spicey but not hot)
red wine vinager (to taste... this should add a tang. You can also use lemon juice)
salt (optional... to taste)
pepper (optional to taste... and be warned it with the mustard can make things kinda hot)
thyme (to taste and also optional)
After you get that all mixed cut some chicken breasts into small pieces. Through it and the mixture into a pan and cook it up.
While that is cooking make some brown rice and some snow pea pods in seperate pots.
When everything is cooked through the rice and the peas in the pan with the chicken and mustard/yogart mix and cook stir it all together.
And there ya go! The great thing about this recipe is that it is great for left overs. In fact I've found it taste better the a day old. You can also put it over pasta instead of rice but brown rice is healthier. If you don't want the rice you can do this just with the chicken and veggie (or even just the chicken) just reduce the amount of sauce. You can also use brocolli instead of the peas which I actually prefer but my husband hates brocolli.
