Thanks for the post! I am on a "food budget" so I definitely am NOT going to follow any recipes in the south beach books..too many ingredients, many of them expensive and hard to find. Chicken is cheap, so I was going to make myself a chicken salad that would last for two days with light mayonnaise...(mayo is OK in phase 1, right?) fat free sour cream, a tsp of lemon juice and some slivered almonds. Then I figure I can eat a lot of broiled chicken breats with melted cheese on top, salmon, turkey bacon, those fake meat products in the freezer (most have less than 10 carbs and 3-4 grams of fiber) eggs, cheese, nuts, and salads. I am sure I will be bored to death by day 10 but phase 2 seems a lot better.
Thanks for the tip about mixing sugar free jello powder into plain yogurt..awesome! I have light yogurt every morning and am going to miss it when I start my diet in 2 days. I am also going to miss fruit!
I am also on Phase 1 of the SB diet. Alot of the recipes I probably won't make, but there are a few that are pretty easy. The quiche cups are good, and I made some mayonnaise dressing with cilantro, yum! I don't like fish, so many of the recipes won't work for me. I have been pretty faithful with the allowed foods, but I also get sometimes confused with the food lists, one area is says no dairy and then I look elsewhere in the book, and it recommends lowfat. So I take the middle road and just use dairy in very small amounts. I seem to be better with my hunger, but I had to cheat and add some fiber to my diet. I've lost 4lbs so far, I guess I will have to wait and see if stays off. I can't really say yet if SB works, but so far so good. Good luck!
