Steel cut oats addict here!
I tried a crockpot recipe last Thanksgiving. Was all excited, thought we'd awake on a nice holiday morning to a glorious breakfast. Oats in the crockpot are really gross! The color, the texture, the taste, and the smell in the house for the day was awful.
Like you, I can't make oats during the week -- not enough time in the mornings. However, I do make a big batch on Sundays, use water only for the cooking, and they last all week in the fridge. I put a small bowl of prepared oats in the microwave on the weekday mornings and stir in a little skim milk halfway through the cooking.
Here is the crockpot recipe we tried if you want to have a go at it. If you do an online search for steel cut oats and crockpot, you will get hundreds of results. I picked this one because I thought the cranberries and dates would be nice for fall and Thanksgiving morning.
INGREDIENTS:
* 1 cup steel cut oats
* 1 cup dried cranberries
* 1 cup dates, chopped
* 4 cups water
* 1/2 cup half and half
PREPARATION:
Spray inside of slow cooker with nonstick cooking spray. Combine all ingredients in the slow cooker, cover and cook on LOW for 8 to 9 hours.
Stir well before serving. 4 servings
