In my opinion the best way to keep the weight off is to start an exercise program you can live with and do it regularly. If you increase your metabolism by doing regular strength training your body will begin to even burn calories while you are doing nothing. The cardio types of exercise (brisk walking, jogging, running, biking, etc.) burn a lot of calories and also increase your metabolism. As far as eating is concerned, generally if you lose weight by doing anything you are not going to be able to continue doing for the rest of your life you are eventually going to gain it back, whether it is quickly or slowly.
