I've also heard about 2 weeks or so, but I found Atkins too difficult for me to stick with in the long run! I DO watch my carbs, but not as strict at Atkins. I avoid sugary foods, but I do let myself eat fruit. I don't eat starchy fruits like bananas though and eat mostly berries. I also try to not eat a lot of breads and potatoes and only eat healthy ones in moderation. Overally I still eat a lot more carbs than a person on Atkins (I run 5 times a week and find that I need those carbs!), but less than the average person. I notice that I can stick with this as long as I want to and my stomach is much flatter than ever. I also have more energy when eating this way and just feel my best overall.
When I did try Atkins once, I literally only lasted a few days! I was eating lots of meat (which I love), but accidentally ate nuts or something I shouldn't have eaten (I don't remember what it was). Even with my mistake in there, I felt like I was running out of things to eat. I was also a college student and wasn't spending as much on groceries since I only worked part time. Now I just eat a high protein diet with lowER carbs and love it!
Similar to Atkins, I find that after losing weight (I am down to my goal weight of 115 now), I can NOT just go back to regular eating right away. I'll just gain it all back. I have to still watch what I eat and only slightly add back certain things. I mostly just increase my calories, but still eat the same foods, when I am maintaining my weight and not trying to lose. I also have to keep up my workouts!
