i have a recipe for scalloped chicken but could very easily be made with pork chops..

SCALLOPED CHICKEN
3cups cooked chicken (or pork chops)
1 1/2cups broth
3 cups boiled rice
4 tablespoons margerine
3 tablespoons flour
2 teaspons salt
dash of pepper
1 cup scalded skim milk
2 cups mushrooms
3 slices bread dried and crumbled
1/3cup blanched cut almonds
sprinkling of paprika

Pour 1/2cup broth over rice. To make a gravy , melt 2 tablespoons margerine in top of double boiler and blend flour, salt, and pepper. Add one cup broth and milk. Cook over hot water until thick, stirring constantly. Brown mushrooms in a tablespoon of margerine. Brown bread crumbs in 1 tablespoon of margerine, very lightly. Cover bottom of casserole with rice. Place layer of chicken over rice. Cover with gravy. Dot with almonds. Add layer of mushrooms and top with buttered crumbs. Sprinkle with paprika. Bake at 325 degrees for 30 minutes. enjoy!!
