Dave: Even if you made a recipe of sugar-free fudge, it will still have carbohydrates in it. She has to watch this as well as sugar intake. I would advise not to make her any sweets. Please help her in dealing with this disease. It really stinks not to be able to eat all of the "good stuff" but she really will need to watch her diet closely.
