hi Mark, I don't think even that your tongue is supposed to be white. The reason that you were probably told this was normal is because most people also have this problem (including myself).
The white color (sometimes greenish or yellowish) is caused by bacteria. Either it is from bacteria byproducts or it is the bacteria themselves. The worst of it is that this symptom is also usually accompanied by bad breath and other symptoms.
The reason I know that this is abnormal is because when I was younger I didn't have this problem and it sort of crept up on me in my twenties, parallel with other problems such as a 15 pound weight gain. I read that it is caused by a vitamin imbalance. This is in Earl Mindells Vitamin Bible. Apparently niacin was supposed to cause improvement, but I took niacin with no results.
I now am looking for things I did or ate when I was younger that were changed in my twenties and have arrived upon a strong suspicion that it is caused by a high-sugar diet. Don't quote me on it though.
Bacteria thrive on sugar so this is another reason why I think low-sugar, low refined food would be the answer.
As far as the white color on the roof of your mouth, I've never heard of it there. I would see a doctor
