REPLY Iam inthe middle ofmaking bread from a breadmix pack and you have to rest the dough twice even before doubling itsbulk Yeast needs rest Each little cell is actively growing and dividing A bread maer wants the yeast to make the correct products to make bread and not alcohol So I suppose that is a little like th euman body You want your body to grow and replace damaged cells You don,t want to produce too much lactate and you don,t want your heart to beat too fast during exercise ie youwant to be firtter So probably you need rest and fresh air An oven has to have air or it won,t produce good bread probably You can be treated with anti smoking patches but you musn,t smoke whlst a patch is on your body From fliveya (screen name)
