Hi Mikester. I thought I'd take a stab at answering your questions. :)
In all the reading I've done on herpes since I contracted it, one of the first things it says about symptoms is that the virus can present itself before an outbreak with symptoms like a mild cold or flu. That would explain the cold like feelings you've been having. Sometimes even without an active breakout, you may still be having such a mild outbreak that there are no pains or blisters (an 'asymptomatic outbreak' in medical lingo), and the cold-like feeling may be all you have.
In much of the reading and when I've asked my gyn, the other main thing that is said about herpes (and I'm going to quote it so I don't screw it up) "A herpes virus that is dormant (or latent) resides in the infected tissue around the lips (either genital or oral) or in the spinal nerves." Since it resides when dormant in your nerves, that might explain why you have bouts of fatigue, and the soreness/tightness in your neck. I know when I am fighting the virus prior to an outbreak (I don't take prescription meds to prevent outbreaks, but I do take a ton of herbal remedies), I feel tired and worn out, my body aches, and my muscles feel tense. I attribute it to virus in the nerves. Your mileage may vary.
As for mood swings, well...nothing I've read indicates that an impending outbreak can affect your moods. But, in my case, I know when I feel one coming on, sometimes I LET it affect my mood without even thinking about it. I get tired of feeling sick, of being uncomfortable, of having to tend to the sores if I get them...so when I start feeling the ache in my spine and down my legs of an oncoming outbreak, sometimes I get really pissed off and grumpy and, well...moody. Even now after having had outbreaks for a while, I occasionally still have that "why me" issue and get crabby. Not that that is what is going on with you, just my opinion based on what I go through on occasion when I'm about to get hit with a new outbreak.
