Suggestions needed for recovering aneurism patient (she's bored)

My beloved MIL (48 years old) is the survivor of three brain aneurisms and two neurosurgeries.
Her first surgery went well, but either during or after her second surgery she had a
very debilitating stroke. She spent 2 months and 2 weeks in the hospital, 6 of those
weeks in rehab. She has made an amazing recovery as her doctor told us the day she
was discharged that she had progressed further than most patients do in an entire year
in a mere 6 weeks.
My MIL, Kathy, is now home, but she's bored out of her mind. She was once very
athletic, enjoyed fishing and the outdoors, crafting, etc. I've been thinking and thinking
trying to come up with something for her to do during the day. She has limited use of
her right side and she has double vision. The only thing I can think of is jigsaw puzzles,
but I'm not certain that she can see those. Any ideas on something she can do basically
sitting down and one handed? I talked to her today and the first thing out of her mouth when
I asked her how she was feeling was, "I'm disgusted! I'm tired of sitting down and laying down
and I want something to do!! I'm bored!"
