The cheese you like and all cheese with no sugar are unlimited.Milk has sugar so get cream and dilute it with water. Alan is on the new board and for more help and answers to this diet type in a search on Atkins Diet. They have their own web site with chat rooms and a health board like this one. All of your answers can be found there. Oh yes it takes a good 2 to 3 weeks before the weight rolls of at 3 to 5 pounds a week. Buy a cheap carb paper back counter at most grocery store for about a buck. This will tell you what foods that are high in carbs and to stay away from.You can order this book on line at the book sites and the Atkins Diet site. Good Luck

: : : : Thank you so much! Actually, I don't really even like milk, I only use it in cooking not really even that now that I'm on this diet. This has been the easiest diet I have ever tried to stick to! I thought I'd miss carbs more than I do, but this is great, and having people like you to talk to about it makes it even easier. Thank you so much for your help and input, Ray. Is it true that you can't have vegetables or salads either? I thought green veggies were ok to eat, if not, I've messed up because I've been eating lots of green beans,dill pickles, celery and cucumbers along with the protein. Anyway, Thanks again!

: : : Hi Sara--you can have salads --on the first 2 weeks keep it down to 2 cups a day--this can include radishes, NO carrots--high in carbs,celery, cabbage,onion, green peppers . You can eat lots of vegetables that are low in carbs like spinach, greens, kale, green beans, sour kraut, green pepper , onion, radishes, celery, small amount of summer squash--those little yellow ones. I like Paul Newmans olive oil and vinegar dressing. You can have real kraft mayo and parmesan cheese too. Nuts of most kinds--watch for sugar content on packages. Sugar will set you back for weeks! I grill on the Forman alot. Chicken breast with green pepper rings and onion slices is good!. Things to stay away from in veggies are dried types of beans, potatoes, sweet potatoes, corn, butter beans. Carbs like rice, potatoes noodles , and beans all turn into sugar in your body and form fat . I am here if ya need help. I soon will go to the new board. I think I will register under Vet Man. You see I bought a Corvett when I weighed almost 400 pounds and I couldn't get in it even to drive it home. I had my cousin deliver it. Now I fit in it and drive it daily. Sure feels great. I saved all my life to buy that car! You hang in there. Also if you want something sweet try the diet jello and use cream for half of the water. Not Bad! You can get spray Redi Whip and freeze it in drops and eat it like ice cream.When you need milk in anything you cook just use cream and if you wish to have it thinner--dilute with half water.Got to run. : : Thanks! I didn't know carrots were high in carbs, good to know. I just thought of something- are canned green beans OK, or does that have to be fresh? I live in a house dominated by high metabolic rated people who eat like a human garbabge disposal, so I'm working on pure will power here. Thanks alot!

: Hi Sara, way to go on the low carb diet. I don't think you will be disappointed. And thanks to Ray also for answering the low carb questions - I was away for a few days over Thanksgiving. Regarding green beans, either canned or fresh is ok with regard to carb content. If given the choice though, lightly steaming the fresh ones would be better for you since more of the nutrients are retained. Same goes for other vegetables. I've been cooking quite a bit of greens (kale, collards, turnips, etc.) lately using my pressure cooker. Green beans would work this way also. I just wash up the vegies, put about 1/2 cup of water in the pressure cooker, add the greens and about 1 tablespoon of bacon grease and dice up one piece of bacon and add salt and pepper. Put on medium to high heat until regulator starts to jiggle, turn down heat a little, but is still high enough to keep it jiggling and cook for about 4 minutes. mmm good. Sometimes I throw in some ham on top of the greens, which makes it even better, and you've got a complete nutritious low carb meal in about 10 minutes. This can also be done with a slow cooker, but obviously more time is required and you will need to add more water to cover vegies. Alan S.

Hi everyone--this board is so easy to use--I will miss it. The new board takes so much time searching for everyone and all topics. Oh well sat in my ways I guess. I use canned food and wash off the water it comes in--fresh is best, but a friend just did some research on what is in your vegetable isle in your store. Lots of chemicals ! Wash everything real good. I also use some frozen vegetables. As long as the weight goes and I am healthy I am happy. Alan--we are all coming to your house for a pot of low carb goodies. I forgot about my pressure cooker. That is a great idea. You both take care. No cookies for Santa this year! Ha Ha. Ray
