Question is, do you want to add 20 lbs of muscle or 20 lbs of fat? If it's muscle, then you need to ensure that you are getting the building blocks necessary for building muscle and that is the amino acids found in high protein foods (meat, dairy, eggs, etc.). Make sure that you are getting adequate protein (about 0.8 to 1.0 gms per pound of lean body mass per day if I remember correctly - go to www.eatprotein.com and checkout the resources section for the protein calculator or get a copy of "Protein Power"). Off hand, I would say that you need a minimum of 25 gms per meal of protein. 1 egg or 1 oz of cheese or 1 oz of meat provides about 6 gms of protein. And you probably have a high metabolism, so additional good quality fats (saturated fats, butter, olive oil, nuts, etc.) in your diet would probably be beneficial (avoid partially hydrogenated vegetable oils and high polyunsaturated oils such as corn oil, cottonseed oil, etc.).
