Inflamed Esophagus

I have a very badly inflamed esophagus caused by GERD rebound coming off a PPI. I am not a bad eater and have been trying to control my diet a bit, but the inflammation isn't getting better and when I eat I get acid reflux because of the bruised, irritated, inflamed lower esophagus.

I don't know what else to do. I see a specialist in a couple of weeks, but does anyone have any solution to what I can do to heal my esophagus and get back to a normal eating life? Someone said to fast for a couple of weeks. Someone said soft food for a couple of weeks as well. I can't stop eating or I'd be sick, but I could do soft foods for a few weeks if I had to, but does anyone know what I need to do to get better? It hurts so badly!
