Chronic diarrhea! Frequent urges! Please help. IBS, Crohns, Gallbladder?

First post on here but been reading lots of threads trying to find answers/info.
I am 30 y/o and in medical field but have not been able to get any help/answers to my own problem.
I have been seeing a GI specialist for the past year on and off with no real relief.
So far he suspects IBS which it seems they always throw out as the culprit without significant proof. All I have had done is stool sample. But heres the basics of the situation:
Chronic diarrhea with approximately 50-75% of BM's being diarrhea or loose stools
Frequent urgency immediately after eating. I can be eating dinner and not even finish my meal before diarrhea comes on and Im rushing to the bathroom
Will have episodes 4-5 times in a day
Causes me to try and wait on meals until at home so Im not pulling over at gas stations to use bathrooms (I seriously know every public bathroom around and which ones are cleanest by this point!)
Its getting embarrassing and I find myself always wanting to wear black or dark pants as I develop "*** sweat" (almost a "swampass") from holding it as I try to get to a restroom when Im on the road (job requires frequent driving)
Any suggestions?
I have tried probiotics from GI Drs recommendation, Immodium (which occasionally seems to help very briefly), and a prescription for a drug that typically works on Cholesterol but GI Dr said typical side effects are constipation which is essentially what he was going for.
I am otherwise a healthy 30 year old, no other significant past medical history and am very active.
Im waiting to go back to GI Dr as I havent been thrilled with lack of testing or a diagnosis and relief of symptoms up to this point.
I do have occasional day/days in which I have no issues with "D" but they are rare and its a constant worry/concern every time I am out in public.
Stool is typically normal color altho it can occasionally be pure water almost coming out that is more yellowish in color.
