Hi Interstate495,

I know popcorn has fiber in it. So, that is a good thing. I think a bit of corn oil is not too bad. Portion control is the key to avoid more calories from the popcorn. You may not want to eat the whole bag, just about a cup will do. Now, I am craving popcorn. I think popcorn is alot healthier than potato chips, in my opinion.

Re: Popcorn

There's a good rule for health in general whether it's diabetes or anything else: Avoid processed foods.

I saw these really big bags of popcorn where I shop and not only did it say "organic" but the price had been reduced about 50%. So I bought 2 bags. The serving size said 3 & 3/4 cups but I would only eat 2 cups.

I noticed that after I finished eating them I felt like I had a mouth full of salt and I didn't like that. Then I happened to be reading about health and learned about the high risk of added sodium. Well, I had 1 & 1/2 bags left and I through them out with the garbage.

I went back to the rule that I stated above: Avoid processed foods. The consumption of process food is what gets people in trouble in the first place. So either we have a rule or we don't - we shouldn't try to have it both ways.

Note: People with diabetes have an increased risk for high blood pressure. If you avoid processed foods and refrain from adding salt to your food at home, you can get your blood pressure down to normal without medication. This is still a good idea if you have normal blood pressure so as to prevent blood pressure problems in the future.

You make some good points about processed food and also about salt, I do take take blood pressure medication and processed food is full of added salt.
