As you told that health wise you are not fit so you should take some doctor advice before changing anything in your diet. As you mentioned about underactive thyroid (which is the most probable reason of weight gain) so you need to be extra careful about your diet and health. If you still feel like going with vegetarian foods, then you can easily start from something like salads (that are high in protein and iron), fruits and green veggies.
And to overcome from your weight problem you should go for exercises regularly and gym also if capable. But firstly do take care of the thyroid problem as it has many side effects on health and body in the form of fatigue, weakness, weight gain, hair loss, dry, rough & pale skin etc.
