I'm not sure about enzymes but there is a hormone that is common to all forms of animal protein. And this hormone is responsible for speeding up cell growth. It's called Interleukin-like Growth Factor 1 (IGF1). And this, I suspect, may possibly contribute to the problem of psoriasis. As I understand it there's a fast growth of new skin cells below the surface and the old skin cells above are not shedding fast enough to make room for the new cells.
All animal protein has this hormone but dairy products are said to be the worst.
Inflammation plays a role in this but I'm not sure if it's because of one's diet etc. or just the result of the Psoriasis.
