Re: Costs too much to eat healthy!

    Wow.
Thank you all for the wonderful responses!

And, you all are absolutely right. It is highly imperative to eat healthy. I just want to point out that I am very frugal with my money...it goes a long way. I never eat out. Only if I get invited somewhere. And, I live a complete modest life. I only buy necessities. How do I splurge and have fun? By taking my girls to a matinee like twice a year. Or, hooking up with some friends for a playdate.

So, I still find it very hard to buy healthy. For all the fruits and vegetables I buy...I have to buy it again, and again....I'm literally spending over $200 a week on food! It used to be $100 when I ate nothing but junk.

My husband the tough one with this. I send him out shopping, and then he "adds" to the list. What does he add?

    Frozen Pizza
    JAX
    Chips
    Ice Cream
    CheezIts
    hotdogs

and then, what do my children beg for? All of the above. They pass on the apple, clementine, or pear for the JAX!!!!!!!! AARGH!

It is a necessity. And, I want to at the very least, introduce these healthy foods to my girls so when they grow, they are familiar with the tastes.

I'll keep on doing what I'm doing.

    A recipe thread sounds great!

If I have spare broccoli, or an extra carrot..........where should it go?

I have to agree 100% with the OP. I am trying to eat healthier, but it is so expensive, whole grain bread is $2+ more than plain old honey wheat bread at my store. Fresh fruits and veggies go bad half the time before i eat them. A head of lettuce usually goes bad before I can finish it, and that is a cheap veggie! I just dont like wasting, whether it is money or food!

I am going to try to make a more feasable menu, but its so much cheaper, and I get a wider variety, to eat a healthy choice or lean cuisine frozen meal.

I am going shopping today for lunch stuff for the week, so wish me luck!

Here's what I made today for a snack...

Garlicky Bean Spread over toasted baguettes

1 can of drained Canellini Beans
    1 TB Olive Oil
    1 Garlic Clove
1/4 cup of chopped fresh parsley
    1 tsp. of lemon juice
    Pinch of Kosher salt

Put it all in a food processor and mix it up to a spread.

Spread it over toasted baguettes (french bread cut in 1 inch slices, broiled in the oven for 3 minutes).

The canellini beans have so much protein for you!

Here's what I made my kids today for a snack......they loved it.

Take a banana and cut it up in chunks, freeze it.
    Buy frozen unsweetened rasberries

    Banana/Rasberries Sorbet

Throw all in a food processor:
    Frozen Bananas
    1/4 cup of frozen rasberries
    1 Tb. Orange Juice
1/2 cup of Fat Free Plain or Vanilla Yogurt
    1 Tb. 1 or 2% Milk
    1/4 cup chopped ice

Mix it all up and VOILA! A pink, gorgeous sorbet. My girls called it Princess Aurora's Ice Cream!

You are SO right. Its really sad that those wishing to be healthy have to pay 3 times what everyone else pays for stuff.

I'm not suprised that people eat such crap its too expensive not too!!

For $70 at my local crap-o-supermarket I can get loads and loads of sub-par fruit and veg and ready meals that will never leave me hungry but $70 bucks at my local healthfood store will need me to go grocery shopping again within a few days.

    Very sad and very annoying.

Just went to the grocery store for stir fry tonight.

    Guess what!

One Red Bell Pepper (medium size)
    $2.40 !!!
I was floored! They are $4.99 a pound and it's just about a half a pound.

This is disgusting. I bought it anyway. I better enjoy this stir fry tonight. And, especially this frigin pepper!

Yes...the chicken was much cheaper at just a $1.99 a pound.

I may start a home garden.

    Home garden is great!

Just happened upon this post. Thought I had to put in my PENNY's worth too I'm an extremely low budget person, last spring for about 4 months my budget for food etc was 5 bucks a week (in San Francisco)... and I like to eat healthy... Now I did it this way (still do even though I am not THAT extremely limited right now)... I get free bread from bakeries when they throw it out and I sometimes have dinner at Food Not Bombs they serve free vegan meals outside... I collect nuts lying around at the bulk food section, between the shelves (no I don't steal FROM the bins) okay maybe I am extreme and of course if you have to feed a family this may not be a good idea especially in terms of germs etc... Ummm - do the produce stores in your area price down produce that is slightly "cosmetically challenged"? Like fruit that is a bit bruised? I get apples from the farmer's market from the 50 cents a pound bin, the ones that are a little "not so perfect".
Also it depends a lot where you do your shopping... like in Chinatown or the Mexican graoceries produce is so much cheaper!!!!!!!!

    Kathrin
