Allergies board

Hi all. I'm new here and new to allergies. For about 4 years, I've been experiencing mouth itching and breakouts on my tongue. I finally decided to be allergy tested this past week. I had the skin test done and tested positive for these foods:

soybeans
fish
chicken
pork
oats
nutmeg
mustard
pecan (nut)
walnut
coconut
egg
potatoe
apple
peach
strawberry
pineapple
parsley
almond
brazil nuts
pistachio
tomatoe
pinto bean
peanut
rice
grapes

As well as many environmental/airborne allergies. Right now I'm on Allegra and Rhinacourt, but am supposed to begin my injections next week. My main concern is the food allergies. My allergist told me to avoid all the foods on the list. Most of them would be fairly easy to avoid (although I like them), but *how* am I supposed to avoid soy??? It's in everything! I've been keeping a journal this week and paying very close attention to my reactions when I eat something I'm allergic to. Not only does my mouth itch, but I've noticed I get stomach upset and sometimes cramping and diarreah as well (depending on what foods I ate). I only get these reactions when I've eaten something I'm allergic to. If I happen to combine allergens, the reaction is worse.
Does anyone have any suggestions on how to avoid soy? Is there some form of soy that is ok? I'm just really confused about all this. Any help would be greatly appreciated.
As a side note, I also have high cholesterol, so some *safe* foods aren't allowed for me because of that. What am I supposed to eat???
