My son was diagnosed with Juvenile Rheumatoid Arthritis at the age of 18 months (yes, kids get arthritis too). But the joints hurt and you get contracture, but not fractures.
Brittle bone disease is sometimes hereditary. I would definitely get the testing for this completed (it is a skin biopsy and some bloodwork from your son - your hubby's adoption doesn't come into play for this). If your son is having trouble giving blood, you can get the doctor to prescribe some EMLA cream to numb the skin before he has to go in as well as giving him some anti-anxiety med (valium or something).
